I'm the original poster and I'm 6'3". I'll agree that the back seats are cramped with very little headroom. However, I find the front seats comfortable and I never feel sore or tired even after long trips.
When I'm driving, I never put the seat as far back as it could go and I never feel any discomfort.
Of course, this is all personal preference. Other 6'3" drivers with different proportions could find the seats uncomfortable and cramped (as the above poster did). But I really like the feel of the interior. Again, the rear seats are a different story...

You're right, it comes down to proportions. The Mini is very spacious in the front to me, but I have heard people who are shorter than I am say how cramped it is.
I also can't fit into an Audi TT, the last MR2 Spyder, an Eclipse, and the tC. The Lotus Elise, a very tiny car, was actually very very roomy inside, but it is the first car in my life I was literally in pain trying to get in and out of. But once I was in I loved it.

The tC seat doesn't go down low enough. I'm 6'2 and have an 07 tC. I fit fine, but I always wish the seat would lower by another 3-4 inches. I feel like I'm sitting way too high up. I have headroom, but I just want a more laidback seating position. The seating position feels like what I'd expect from a camry.

Yeah, I wish auto manufacturers would choose ergonomics over design more.
I'm 6'2" and really really wanted to get a tC. But I couldn't fit in it. The irony is I can fit perfectly in a new Mini with a sunroof, so being "small" doesn't mean you can't have proper packaging.
